"Tahinopita" or Tahini cake with honey and orange juice, without eggs
There's no fancy prep work here, all the ingredients are basically thrown in to a bowl and mixed together. The final result is absolutely delightful and as an added bonus, it's Lenten approved! It is dairy-free and do not contain eggs but it's still delicious! Enjoy...
270 gr. self-rising flour
1 teaspoon of cinnamon powder
1/4 teaspoon of grounded nutmeg
1 teacup of tahini
½ teacup of olive oil
½ teacup of sugar
2 tablespoons of honey (full)
1 cup of orange juice
½ teaspoon of baking soda
1 freshly grated orange
½ cup of walnuts (chopped)
½ cup of raisins
sesame seeds for garnishing at the end
Stir all the ingredients together in a large bowl (add the flour at the end, little by little). Pour the mixture in a lightly oiled pan and sift sesame seeds evenly over the top of the pie.
Preheat the oven in 180°C and bake the pie until a toothpick inserted into the center comes out clean, about 30 minutes.
In case that the mixture is too thick, you may add a little more orange juice.
Tahini is a ground sesame seed paste, similar to peanut butter. It is a creamy, oily, and smooth nut butter rich in calcium.
