Penne with dried tomatoes

A very "interesting" combination of  ingredients, full of mediterranean taste...

Ingredients: 

500 gr. pasta - penne

200 gr. dried tomatoes

200 gr. feta cheese, crumbled

¾ cup of olive oil

1 cup sweet red wine (Mavrodafni of Patras)

basil (fresh or dry)

salt, pepper

Soak dried tomatoes for a while in the wine and then drain and cut in the middle. Heat olive oil in a saucepan (low heat) and add one clove garlic, optionally, that take out after 2-3 minutes. Add dried tomatoes, red wine, one tablespoon of basilic and a little pepper, mix and  simmer over low heat for 15 minutes. Boil penne in plenty of fresh water seasoned with salt for 10-12 minutes. Drain and discard the water. Pour the sauce on the top of penne, add the feta cheese and mix until well combined all ingredients. Sprinkle with freshgrinded pepper and serve.

Well, I must admit I am not a cook and do not like very much trying myself in the kitchen. However, my mouth watered when I read this recipe and thought, why not? Don't think mine tasted as good as Katerina's but nonetheless has become my favorite and I try it now at least one a week!! Thank you for something, simple, quick, and immensely tasty!
