Favokeftedes (Yellow Split Peas Patties) with yogurt-tahini and capers sauce

Leftover cooked yellow split peas? Any idea of what to do with it? "Transform" it to a totally different version... Favokeftedes (yellow split peas patties)!!!
This is not a burger, nor falafel, it is something in between . Whatever it is, the yellow split peas patty is very nutritious and healthy because it is grilled and does not contain oils, yet still retains  a full flavor profile and it's very tasty !


For the yogurt sauce with tahini
3 tbsp. yogurt
1 tbsp. tahini
1 1/2 tbsp. lemon juice
1 tsp. honey
Freshly ground pepper
1-2 tbsp. chopped capers

For fava (yellow split peas) patties

250g. cooked thick fava, chilled for 1 day (leftover)
1 large onion, chopped
2-3 spring onions, chopped
1-2 cloves garlic, minced
1 tomato, cut into cubes
1/2 bunch dill, chopped
1/2 bunch parsley, chopped
a little mint, chopped
1/2 tsp sweet paprika
a little olive oil (1-2 tbsp)
1 teacup coarse semolina 
salt and fresh-grounded pepper

flour for breading
olive oil for drizzling


Place thick, cold yellow split peas, we have left over, in a large bowl. Combine all ingredients and fresh herbs.   Season with salt and pepper to taste. Thoroughly combine, adding a little more semolina, if necessary, to form a firm mixture, not sticky.
With wet hands rip off golf ball sized pieces of dough and flatten with your hands.  Spread greaseproof paper on a baking dish and place yellow split peas patties after you flour them . Drizzle with olive oil and put them in the oven under grill for about 15-20 minutes, until golden brown on both sides. 


Serve with pita, or on its own with your favorite salad or dipping sauce. Ιdeally accompanied by this particular yogurt with tahini sauce and with bulgur salad.
