Carrot cake with walnuts
A very special cake, healthy and full of flavor... just delicious!!!
1 cup of olive oil
1 1/2 cups of sugar
3 ½ cups carrots (about 400gr.), clean and grated
1 cup walnuts (chopped)
300 gr. self rising flour
1 teaspoon baking soda
½ teaspoon nutmeg powder
1 teaspoon cinammon
5-6 tablespoons of orange juice
Beat all the ingredients together except from the carrots and the walnuts which will be added at the end and mix with a tablespoon. Butter a cake form and pour the mixture inside it. Bake in a moderate oven (180ο C) for about 45 -50 minutes. Let it cool and then turn upside down. Sprinkle some sugar powder on the top and serve.
While baking, don't open the oven, otherwise the cake will deflate.
