Brownies with olive oil
It's a very simple recipe but it's really divine!!!
This recipe belongs to Mr Stelios Parliaros, I just reduced the quantity of the sugar from 200gr to 160gr for my chinese friends...
200 gr. semi-sweet chocolate chips
160 gr. olive oil
160 gr. sugar
120 gr. flour for all purpose
80 gr. almonds or walnuts (chopped)
Melt the chocolate chips in a small pot that underneath is boiling water in another pot, add the olive oil and mix. Beat the eggs with the sugar very well. Pour the mixture with chocolate and olive oil in the beaten eggs and stir. Add the flour and the chopped almonds or walnuts. Put the mixture in a form with diameter 20-22cm and bake in a preheated oven 160ο C for 25 minutes (if you bake longer it will get dry.)
You can preserve it out of the fridge, in room temperature. If you want, you can warm lightly before serve.
You can accompany excellent with ice cream. If you don’t like, you can leave out almonds or walnuts.
