An easy and quick prepared dish that keeps all the relish of summer vegetables and herbes in it!


1 kilo potatoes
4 aubergines (eggplants)
4-5 small zucchinis
2 big onions
1 green pepper, cut into slices
1 red pepper, cut into slices
½ kilo tomatoes, peeled and coarsely chopped
1 cup of olive oil
1-2 cloves of garlic
1 bunch parsley, finely chopped
dry oregano
salt – pepper

Clean and wash the vegetables. Cut them into slices. Put all the ingredients in a large baking pan and stir to mix. Bake the vegetables in 220ο C for about 1 ½  hours. If necessary, add a little water, during cooking.


You may brake some feta cheese in pieces and add on the top a few minutes before the food is over.

You may add some leaves of fresh basilicum.
